Today was mothers day. It was a good day. I started my day waking up to breakfast in bed. Hubby Dear made me a country potatoes with egg skillet and a fruit platter. I snarfed up the potatoes and eggs before I even though of practicing my picture taking skills. I did take pictures of the fruit platter and because I am using this blog page to keep track of my progress with my hobbies(photography being one of them), I will post many photos:
Hubby Dear also presented me with not one, but two flower bouquets that he grew in his treasured garden!
Later in the day, I tried experimenting with a cupcake recipe that I am hopefully going to use at little Cabbage's baby shower. Ms.S requested tres leches (three milk) flavored cupcakes. This is what I did:
I baked cupcakes using a white cake mix and following the recipe that is on the box. I used the foil cupcake liners:
I then sliced the tops of the cupcakes off (saving the sliced off part). Using a chopstick I then poked holes into the bottom part of the cupcake.
I mixed together: 1 can evaporated milk, 1 can sweet concensed milk, and one can coconut milk. I then gently peeled the foil away from the cupcake sides, leaving it attacked to the bottom, and placed it back into the cupcake tray. I slowly poured about 1 tbsp of the milk mixture over each cupcake and let it sit, then poured another tbsp over each and let them sit for about 45 minutes.
Once the cupcakes had set, I placed a small amount of whipped cream on each of the cupcake tops and stuck them back onto the cupcake bottoms. I finished them off by frosing with whipped cream and garnishing with chopped candy bar. Here is the finished product:

After tasting the cupcakes, I decided they needed more of the milk mixture, so I think I will add one more tbsp during the soaking period. I also think I might poke holes into the tops and pour a little milk mixture over them once they are in place back on the cupcakes.
Although the photo shows the cupcake without the foil, Im not sure if I will serve them with or without the foil. I'm thinking they might be too moist to serve without the foil.

Ooooh cupcakes look amazing, I can't wait to taste them! And I love love the flowers Eric gave you, they are so much better than your average store bought roses:)
ReplyDeleteHere is an update on the cupcakes. Ms. A and I made the cupcakes for the baby shower. The flavor was really good; what I forgot to take into concideration was the weather. I used whipped cream for frosting. As probably everyon knows, whipped cream and Arizon summers do NOT play nice together!! The whipped cream melted right off of the cupcakes. The cupcakes looked very sad (disgusting would probably be a better word). Please learn from my mistake. Don't use whipped cream in Arizona. Use some other type of frosting.
